Equal SMP

Propably NOT a Kernel Question but here goes :
If I have SMP-box and run various pieces of software, (ie sendmail,
Cyrus, Squid), how do I/Kernel/Little Green Men make sure that the
processors are equally used?
Any pointers to FAQs etc are welcome.
